Baked Cod With Lemon & Broccoli

Prep Time: 5 mins

Cook Time: 20 mins

Servings: 2

 

Ingredients:

  • 2 boneless, skinless cod fillets
  • Salt & pepper
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 package of broccoli florets
  • 2 tbsp lemon juice
  • 1 baking pan or cooking sheet
  • Tinfoil

 

Prep:

  • Preheat the oven to 400°F.
  • Line the baking pan with foil.

 

Directions:

  1. Place the cod fillets on the baking pan. Sprinkle with salt & pepper to taste.
  2. Pour the soy sauce and olive oil into a bowl, and toss in the broccoli. Stir.
  3. Place the broccoli on the baking pan.
  4. Bake for 15 minutes.
  5. Open the oven door, and sprinkle the lemon over the fish and the broccoli.
  6. Bake for 5 more minutes.

Let cool for a minute, then serve immediately. Bon appétit!
